Introduction and go over syllabus. Chef broke us into groups and assigned each group task, ours was chicken stock. It was a little confusing as I didn’t understand how he split us up, but once I finally figured out which group I was in, it went pretty smoothly. I like Chef O, first impression is that he’s not going to take a lot of shit – which I like. He also seems very intelligent, with a lot of culinary knowledge to share. Looking forward to this block!
